Raw weights on purpose: cooking changes what a dish weighs β rice absorbs water, meat renders fat β which moves energy per 100g without changing what you ate. Costing the ingredients you were given is the stable number, and it scales with the serving size above.

Place a non-stick pan over a high heat. Add a drizzle of cooking oil and when hot, add the mince. Let it cook until golden, shifting it around the pan and breaking it up with your cooking utensil as it cooks. This should take about 6-8 minutes. Once you have broken it up, let it cook for a bit uninterrupted to allow it to caramelise a bit.

In the meantime, prep your ingredients as listed.

Bring another pan to medium heat. Add a drizzle of cooking oil and when the pan is hot, add the broccoli. Pan-fry the broccoli until it is cooked but still crunchy, about 3-4 minutes. Shift it around the pan for even colouring. Remove from the pan on completion and set aside in a bowl.

When your mince is nearing completion, add the spring onion (reserving some for garnish), garlic, ginger and chilli (to your heat preference). Mix to combine and continue to pan fry until the ingredients have softened, about 1-2 minutes. Then pour in your Sticky Sauce and simmer until heated through and turning sticky, another 1-2 minutes. Season to taste.

While that simmers, rinse your baby spinach and coriander. Roughly chop up your coriander. To the bowl of broccoli, add the julienned carrot, baby spinach, coriander, sesame oil, some salt and the remaining spring onion. Toss to combine, season to taste and set aside.

Dish up your sticky beef alongside your grilled broccoli and carrot salad. Sprinkle over the sesame seeds and get stuck in!
