Method

  1. Preheat the oven to 220Β°C. Boil your kettle and ready a greased baking tray.

  2. Bring a pot of salted water (pre-boiled from your kettle) to boil, that is big enough to fit your gem squash. Halve each gem squash and scoop out the seeds. When the water is boiling, place the gem squash halves into the pot to simmer until soft when pierced, 10-14 minutes. Push them down to make sure they are completely submerged in water.

  3. Heat a knob of butter and a drizzle of cooking oil in a pan over a medium-high heat. De-core and slice your apples into wedges. When hot, add the apple wedges and cook them until golden on both sides, turning them as they colour. This should take about 6-8 minutes in total. When ready, remove them from the heat and place in a pile to the one side of your baking tray. Season them well. Don't wash this pan just yet.

  4. Pick the leaves of sage and trim the ends of your beans. Place the green beans to the other side of the baking tray. Toss in some olive oil, salt, pepper.

  5. Return your pan over a medium-high heat. Use tongs to place the pork chops into the pan fat side down to render the fat crispy, about 3-4 minutes. Then, cook the chops on either side until golden, about 1-2 minutes per side. Then place the chops on top of the apple wedges and beans and season them well. CHEFS NOTE: Your pork chops should not be cooked through at this stage.

  6. When the gem squashes has softened, place them onto the baking tray and fill each half with some grated Puglia Asiago cheese, sage leaves, a drizzle of olive oil, and some salt and pepper.

  7. Place the tray into the oven to cook until the pork is cooked through, the apples have softened and the cheese has melted, about 8-12 minutes, until done to your liking.

  8. Plate up your tasty ingredients and get stuck in!
